- I bake quick bread recipes. (In fact, this banana bread has become one of THE most popular posts on my site.)
- I eat fiber.

This recipe was an instant hit around my house. Subtly sweetened with honey and sporting a fiber boost thanks to the use of high-fiber cereal, this quick bread makes a wonderful start to your day with a cup of coffee or a glass of milk. Or, enjoy it any time of day as a sweet treat.
Sure, you *could* look for fiber in places like a fiber supplement, but wouldn’t you *rather* look for it in a loaf pan full of real food? I know I would! Give this easy baking project a try and let me know what you think! It’s a delicious way to start your day. ~Regan
Easy Morning Glory Quick Bread

Description
The classic flavors of Morning Glory muffins get a makeover in this quick bread. It’s subtly sweetened with honey, made with high-fiber cereal, and is the ideal morning treat!
Ingredients
- Cooking spray
- 1 cup high-fiber cereal (such as Fiber One Original)
- 2 cups unbleached all-purpose flour
- 1 tablespoon ground cinnamon
- 1 tablespoon pumpkin pie spice
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 medium carrots, shredded (about 1 cup)
- 1 apple, shredded (about 1/2 cup)
- 1/3 cup raisins
- 1 cup honey
- 1 cup buttermilk
- 2/3 cup olive oil or melted coconut oil
- 1 large egg, at room temperature
- 2 teaspoons raw sugar (optional)
Instructions
- Preheat oven to 350 degrees F. Line a loaf pan with parchment paper, and coat with cooking spray.
- Pulse cereal in a food processor until coarsely ground. Add flour, cinnamon, pumpkin pie spice, baking powder, baking soda and salt; pulse slightly to mix. Pulse in carrots, apple, and raisins. Add honey, buttermilk, oil and egg; pulse just until dough forms.
- Spoon batter into prepared pan. Sprinkle top of batter with raw sugar, if desired. Bake in preheated oven 50 minutes or until wooden pick inserted into center of loaf comes out clean.
- Let cool on a wire rack 10 minutes; remove from pan, and let cool completely. (Bread may be stored in an airtight container or wrapped in plastic wrap.)
